You read that right, this is a recipe
to make cookies using Pinto beans.
With applesauce, raisins and nuts.
This is a cookie that's good for you.
Ingredients:
1/2 (15 oz) can Pinto Beans, drained
1 cup brown sugar
1/2 cup butter or shortening
2 eggs
3/4 cup chunky applesauce
2-1/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup nuts
1/2 cup golden raisins
Directions:
Pre-heat oven to 375 degrees F.
In a food processor or blender
put sugar and shortening and cream,
add eggs and blend well, remove to bowl.
Drain and rinse pinto beans,
puree in food processor until smooth.
Add to bowl. Add applesauce to bowl.
Combine dry ingredients in another small bowl;
add to creamed mixture and mix until smooth.
Stir in nuts and raisins if desired.
Drop by tablespoons onto greased cookie sheet.
Bake for about 15-17 minutes,
or until golden brown. Cool on rack.
