This is a good recipe with the tastes
of sweet corn and sweet Italian sausage.
It's a good make ahead dish and can be
served right out of the oven warm or cold.
Ingredients:
4 cups water
1 tablespoon un-salted butter
1 teaspoon salt
1 cup cornmeal
1 cup frozen corn
2 Tablespoons oil
1/2 cup chopped onion
1 Italian sausages, in small pieces
1/4 pound sliced baby bella mushrooms
1-2 cups marinara sauce
1/4 pound Cheddar cheese, cut in small pieces
Directions:
Bring the water and salt to a boil,
and slowly stir in the cornmeal,
using a wire whisk to mix
while pouring it in.
Simmer for 7-10 minutes,
stirring every now and then.
Heat the oil in a saucepan,add onion,
cooking a few minutes till soft.
Add sausage and cook two minutes.
Add corn and mushrooms, cook
another couple of minutes.
Pour in the marinara sauce,
stir, cover, and simmer for 30 minutes,
adding more water if it gets too thick.
When the sauce is almost ready,
heat the oven to 350 degrees F.
put cornmeal in until warm
and the cheese is melted.
Cut the polenta into squares and
spoon the sausage and sauce over the top.
