Sausage Meat Ragu

This is the recipe I use to make an
Italian meat ragu with mild sausages.
You can use it on pasta, rice balls
or simply to dunk a piece of bread in.

Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
3 mild Italian sausages
1 28-oz. can of tomatoes
2 cups frozen peas
6 basil leaves, chopped
1/2 tsp red pepper flakes (optional)
salt to taste

Directions:
In a medium-sized saucepan,
over medium heat, heat the olive oil.
Add the chopped onion and cook until soft.
Remove sausage meat from casings, add to pan.
Break up the meat with a wooden spoon,
and cook until the meat is not longer pink.
Add the chopped tomatoes and seasonings.
Cook for about 30 minutes
and then add the frozen peas.
Simmer the sauce for another 30 minutes
or until it has thickened.
Remove from heat and let cool.
