Similar to the texture of porridge,
this is a simple recipe for a good
and satifying bowl of mashed squash.
It's easy to cook a whole squash in
the microwave for 10 minutes or so.
Ingredients:
4 cups of cooked winter squash, mashed
3 tablespoons butter
2 to 3 teaspoons cider vinegar
1 or 2 teaspoons ground ginger
1/2 teaspoon salt or to taste
Directions:
In a saucepan over medium heat,
stir and heat all the ingredients together.
Adjust seasonings to taste, and serve hot.
