This is one of the best omelettes ever!
Fresh strawberries in a blanket of eggs.
It's quick to make and a very tasty dish.
I've even made this using a microwave oven.
Ingredients:
Fror one omelette:
2 eggs
1/2 teaspoon cold water
1/4 cup fresh Strawberries
1 teaspoon sugar
Directions:
Wash and hull strawberries,
place in a small bowl with sugar.
Mash up a bit.
Beat eggs in bowl with water until light.
In heated non-stick pan or heavy iron skillet, add eggs.
Stir once, then quickly lift the edges as the eggs
begin to cook and let the liquid part run under.
When cooked but still soft on top,
spoon Strawberries on one side and
fold other side over filling.
Sprinkle with sugar if desired.
