Tomato and Peanut Salad

Make this salad using fresh tomatoes
and a good handful of salted peanuts.
Most salads are usually drenched
in oily dressings and vinegar.
This recipe uses the fresh flavors
of lime and parsley to add enough
moisture and taste, no need for oil.

Ingredients:
6 tomatoes cut into eighths
1 cup or more peanuts
1 bunch spring onions, sliced
Juice of half fresh lime
Salt and pepper
1/2 tsp. dried mint
1 tbsp. fresh chopped parsley

Directions:
Toast the peanuts in a frying pan for a few
minutes until they turn a golden brown color.
There is no need to add oil when doing this.
Simply mix all the ingredients together and serve.
