Creamy Warm
Potato Salad

I can't say this is as good as
ice cream or whipping cream but,
I found myself licking the spoon
after putting this one together.

Ingredients:
6 russett potatoes, peeled
1 slice red onion, chopped
1 slice green bell pepper, chopped
1 slice red bell pepper, chopped
1 teaspoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon white sugar
1/2 teaspoon parsley
1/8 teaspoon black pepper
1/4 cup mayonnaise
1/2 cup sour cream
1 teaspoon prepared mustard

Directions:
After peeling potatoes, cut into 2"
pieces and place in a large pot,
cover with cold salted water, bring to
boil and cook for about twenty minutes.
Meantime cut up peppers and onion.
When potatoes are done, drain and
season with sugar, salt and pepper.
Add vinegar, parsley, peppers and onions.
Stir a few times with spoon to combine.
Let sit in warm pot for ten minutes.
In a bowl mix mayonnaise,
sour cream and mustard.
Add to pot and mix well to combine.
Serve warm. Refrigerate any left overs.
1/8 teaspoon garlic powder
