With tomatoes growing in the garden,
I made a recipe for fresh tomato pie.
With fresh basil and cheddar cheese.
Ingredients:
1 9-inch pie shell, baked and cooled
4 large tomatoes (green or red),
peeled and thickly sliced
Salt to taste
black pepper to taste
2 tablespoon fresh chopped basil
6 slices bacon, fried and crumbled
1 cup Real mayonnaise
1 cup grated cheddar cheese
Directions:
Preheat oven to 350 degrees F.
Fill pie shell with tomatoes,
sprinkle with salt and peepper,
basil and bacon.
Mix mayonnaise and cheese.
Spread over tomatoes.
Bake for 30 minutes
or until lightly browned.
