Greek Style Green
Beans and Potatoes

Fresh green beans and potatoes sauted
in Lykovouno olive oil makes a
delicious and healthy side dish.

Ingredients:
1 Cup Lykovouno olive oil
2 lbs. fresh green beans
1 large onion, finely chopped
4 potatoes, cubed
3 cloves pressed garlic
1 bunch parsley, finely chopped
1/4 cup water
1/4 tsp sugar

Directions:
Sautee the onion in the olive oil
until slightly translucent.
Add washed and stemmed green beans and
all of the other ingredients except the potatoes.
Simmer for 20 minutes, add the cubed potatoes.
Cook for another 20 to 30 minutes
or until potatoes can be cut with a fork.
Salt and pepper to taste and serve.
