You can make your own fruit pectin at home,
for fun, or if you want to avoid the
chemicals and preservatives
found in commercial pectin.
Ingredients:
Apples
Water
Directions:
Slice the apples thinly, but do not core or peel them.
Put the slices in a large non-aluminum pan
or kettle and add one pint of water
for each pound of sliced apples.
Bring to a rapid boil, boil for 15 minutes.
Remove from stove and cover with a lid.
Strain juice through a layer of cheese cloth,
but do not squeeze the pulp.
Return the pulp to the kettle
and add water as before.
Simmer over low heat for 15 minutes,
remove from heat and cover.
Cool and strain again,
but this time go ahead and squeeze
the pulp so that all the juice is removed.
The remaining pulp is your pectin.
You can use right away or freeze for later use.
