This recipe works perfectly with
the overripe tomatoes as well
as the not quite ripe tomatoes.
Even makes store bought tomatoes
taste almost as good as the garden.
Ingredients:
4 large tomatoes
1 Tablespoon minced onion
2 tablespoons fresh chopped basil
1 teaspoon celery seed
1/2 cup bread crumbs
4 teaspoons butter
salt to taste
black pepper to taste
Directions:
Preheat oven to 400 degrees F.
Remove stem ends from tomatoes.
Cut tomatoes in half horizontally.
Set cut-side-up in a shallow baking dish.
Sprinkle with salt, pepper, onion,
herbs, toasted bread crumbs.
Dot with unsalted butter.
Bake for about 15 minutes.
