We just had a tornado pass through
that made a big mess of our peaches
and most of the stalks of sweet corn.
Wanting to use them up I put together
this summer salad with both and it
turned out so good that I wish I'd
have thought of this combination before.
Try this with garden ripened peaches
and the freshest sweetest corn you can.
Ingredients:
4 peaches, peeled and sliced
6 ears of grilled corn
1 jalapeno, chopped
1/2 red onion,peeled and diced
1 handful of cilantro, chopped
juice of two limes
salt to taste
Directions
Boil corn (about 8-10 minutes in boiling water);
cook on grill for 1 minute each side.
Cut kernels off the cobb. Let cool.
Mix remaining ingredients and serve.
