Penne Alla Vodka
with Poached Salmon

The taste of the vodka sauce
should remind you of the
Bloody Mary alcohol drink.
There are a lot of recipes for
Penne alla Vodka that use bacon.
I prefer it very simple,
and use salmon in this recipe.

Ingredients:
7 oz penne pasta
2 salmon fillets, poached
2 oz tomato paste
1 1/2 tablespoons butter
1/4 pint heavy cream
1 shot vodka
1 teaspoon brandy
salt to taste
Black pepper to taste
chili pepper to taste
fresh parsley leaves
1/2 cup parmesan cheese

Directions:
Prepare the sauce by melting the butter
and in hot water diluted tomato paste.
Add the cream the chili the vodka
and the brandy and keep it warm.
Boil the pasta and just before taking
it out of the water warm the sauce.
Then mix the pasta directly in the
hot sauce pan and keep it on
the stove for one more minute.
Plate along with poached salmon,
finish with parmesan and parsley.
