Potato Lasagna

This is a recipe for a potato lasagna.
I made this with potatoes because I had
a ten pound bag sitting in the pantry.
It came out very good, the potatoes where
nice and creamy and went well with the cheese.

Ingredients:
6 cups thinly sliced baking potato
2 cups ricotta cheese
1/2 tsp. salt
1/2 tsp. dried basil
1/8 tsp. black pepper
1 1/2 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 1/2 cups tomato sauce
olive oil

Directions:
Oil the bottom of a baking dish.
In a bowl combine ricotta, egg
basil, salt and pepper.
Lay about one third of the potato
slices across the bottom.
Top with about one cup of sauce
and a 1/2 cup of the cheese mixture.
Repeat these layers two more times,
ending with cheese on top.
Cover tightly with foil and bake
in a 350 degree F. oven for 1 hour.
Let stand 10 minutes before serving.
