The real Clafouti is a baked French dessert
of black cherries arranged in a buttered
dish and covered with a thick flan-like batter.
Dusted with powdered sugar and served lukewarm.
I had some fresh raspberries sitting in a bowl
and decided to throw this recipe together.
It's very good, and a good way to use up berries.
Ingredients:
2 cups fresh raspberries
3 eggs
1 cup milk
1/2 cup flour
1/2 cup sugar
1 teaspoon vanilla
1/4 teaspoon nutmeg
1/8 teaspoon salt
Powdered sugar (optional)
Directions:
Preheat oven to 350 degrees F.
Oil or butter a pie dish.
Scatter raspberries in dish,
reserving a few for garnish.
Beat eggs until foamy.
Add remaining ingredients except
powdered sugar and mix until smooth.
Pour this mixture over raspberries
and bake 20 - 25 minutes, or until a knife
inserted in the center comes out clean,
Top with reserved raspberries and,
if using, powdered sugar. Serve warm or cold.
