Zucchini, Beef
Macaroni and Cheese

With garden fresh zucchini you need
good recipes just to use it all up.
I made this stuffed zucchini using beef,
elbow macaroni and chedder cheese.
This is a good summer-time meal.

Ingredients:
2 zucchini
1 box macaroni and cheese
1 pound ground beef
1 pound shredded chedder cheese
1 onion, peeled and chopped

Directions:
Cook macaroni and cheese per package directions.
Cut zucchini in half lengthwise, and
remove seeds creating a place for stuffing.
In a skillet saute ground beef and onions,
stirring until beef is browned, drain fat.
Add beef to macaroni and mix to combine.
Stuff zucchini shells and place them in a
microwave safe dish, cover with plastic wrap.
Place in microwave on high power until
the zucchini is cooked through, cooking time
will depend on the size of the zucchini.

Simply an amazingrecipe, Never would have thought of stuffing a zucchini with mac-n-cheese.
