This is a comfort food at it's best.
Creamy smooth and tastes so good!
Tastes better the more it's reheated!
Ingredients
1 onion chopped
2 apple skins
5 slices crumbled cooked bacon
1/2 stick butter
6 acorn squash halves
1/2 cup sugar
2 quarts chicken broth
1 quart heavy cream
1 tablespoon dried sage
1 teaspoon nutmeg
Salt and pepper to taste
Directions
Halve the acorn squash and discard seeds.
Place halves on a baking sheet.
Drizzle with olive oil.
Sprinkle with salt and pepper.
Bake for an hour or until browned and tender.
Saute apple and onion in butter until translucent.
Add bacon and suate a few more minutes.
Remove squash from shells and mash slightly.
Save shells.
Add squash and remainder of ingredients.
Simmer until thickened.
Serve in shells, garnish.
with dried nutmeg and sage.
