Fresh corn pops and turns soft
in this bean relish recipe.
Ingredients:
1 Tbl. Olive Oil
3 C. Corn, drained
1 C. Black beans, drained
1/2 C. Poblano peppers, diced
1/2 C. Green onion, sliced
1 Tsp. Lemon Pepper
1 Tsp Salt
Directions:
In a large skillet over high heat, add oil.
Add remaining ingredients and stir
until corn starts popping.
Remove from heat and refrigerate.
