Peter Piper picked a peck of
Hot Pickled Peppers!
Pickling peppers is a rewarding
and creative way to take advantage
of a bountiful garden harvest.
Ingredients:
Pickling Brine:
4 cups distilled vinegar
4 cups water
8 tablespoons pickling salt or kosher salt
3 tablespoons honey
Directions:
For the Brine:
Add all ingredients to a saucepan
and bring to a boil.
Fill the Jars with Flavor
Add the following to the bottom
of each sterilized quart jar
(half of each item for pints).
Ingredients:
For the peppers:
2 cloves garlic - rough chopped
2 small bay leaves
4 small sprigs of fresh thyme
4 small sprigs of fresh oregano
2 tablespoons extra virgin olive oil
Directions:
Pack the jars tightly with peppers,
then pour the boiling brine into the jar.
Work through all the jars,
filling and then allowing them
to settle for a moment before topping off.
Shake the jars a bit,
to work the brine into the
tiny openings of whole peppers.
Top off each jar, bringing the brine
up just to the bottom of the threaded section.
Keep your peppers crisp allow them
to cool and store in the refrigerator.
