Perfect Roast Pork

Roasting a bone-in pork shoulder,
is really quite simple to do.
Some people brine it and some don't.
Some cook it covered and some don't.
There really is no wrong way to cook it,
just remember to use an instant read
thermometer and cook it until the
temperature is up to 200 degrees F.
The meat will be fall of the bone good!

Ingredients:
1 -6 pound pork shoulder
6 Garlic cloves
1/4 tsp. ground Black Pepper
1/2 tbsp. of crushed Oregano leaf
1/2 cup. Virgin Olive Oil
4 tsp. White Wine Vinegar

Directions:
Wash the pork shoulder and pat dry.
In a mixing bowl combine the rest of the ingredients.
With a sharp knife make incisions
in different place of the pork shoulder.
Put the mixture in the incisions
and rub the marinate over the pork.
Refrigerate over night if desired.
Let it rest for 2 hours
before putting it in the oven.
If you planned to cook it the same day,
prepare the pork at least 1 hour
ahead of time and then cook it in the oven.
Turn the oven 10 minutes before you
place the pork shoulder in the oven
and set the temperature to 350 degrees F.
Cook the pork for 3 1/2 hours covered.
Then uncovered the pork and raise
the temperature to 375 degrees F.
and cook for 15 to 30 minutes
until the skin is browned.
