Fresh zucchini and yellow squash
make for a great looking and
tasting lunch time salad.
Use small zucchini which hasn't
had time to grow large seeds.
Ingredients:
2 small zucchini
2 small yellow squash
1 small red onion, peeled and diced
1 tablespoon extra-vigin olive oil
1 teaspoon red wine vinegar
1/2 teaspoon sugar
salt to taste
Fresh mint
Directions:
Use a vegetable peeler to make
decorative peels in squash,
every inch or so lengthwise.
Slice the squash very thin,
and arange in a bowl.
Sprinkle red onion on top.
In a bowl whisk the oil,
sugar and vinegar,
drizzle dressing over top.
Season with salt to taste.
Garnish with fresh mint.
Serve immediately.
