This is a recipe for making a fresh
taco salad that's quick to make
and tastes like a taco salad should.
Ingredients:
1/2 c. Canned black beans, rinsed and drained
2 c. Romaine lettuce, torn in bite-size pieces
4 grape or cherry tomatoes, cut in half
2 Tb. Shredded reduced-fat cheddar cheese
1 Tb. reduced fat sour cream
2 Tb. Salsa
10 baked corn torilla chips
Directions:
Mix black beans, lettuce, tomatoes,
cheese, and sour cream in a bowl.
Toss to mix well.
Add salsa and toss again.
Serve on a bed of tortilla chips.
