Tuna Melt Sandwiches

This is a recipe that takes canned tuna fish
and transforms it into a tasty sandwich.
With plenty of texture and good flavor.

Ingredients:
2 (5-ounce) cans solid white tuna, drained
1/2 cup chopped kalamata olives
1/3 cup mayonnaise
1/8 cup finely chopped red onion
1/8 cup celery, chopped fine
1 tablespoon capers, drained and rinsed
1 tablespoon fresh lemon juice
1 teaspoon freshly ground black pepper
8 slices white or wheat bread
3 tomatoes sliced (16 slices)
8 slices of provolone cheese
Grated black pepper to taste

Directions:
Mix together the tuna, olives,
mayonnaise, celery, onion, capers,
lemon juice, black pepper and salt.
Stir until well incorporated.
Arrange the bread slices on a sheet pan.
Divide the tuna evenly among the 8 slices of bread.
Top with the tomato slices and sprinkle
lightly with salt and pepper, and add the provolone.
Broil the sandwiches until the
cheese is golden and bubbly, about 5 minutes.
