Butternut Squash
with Orzo Pasta

Winter time is a great time to make
this butternut squash and orzo pasta.

Ingredients:
1 tbsp olive oil
1 shallot, chopped
1 clove garlic, minced
1 butternut squash, peeled and cubed
1 cup orzo
3 cups water or vegetable broth
1/2 cup parmesan cheese, grated

Directions:
Add olive oil to a large skillet
and saute garlic and shallot.
Add in butternut squash and
saute until cooked through.
At the same time, bring 3 cups of water
or broth to boil in a large pot.
Cook until al dente, about 8 minutes.
Drain orzo and add into the skillet
with the butternut squash.
Top with parmesan cheese.
Serve immediately.
