Artichokes and grapefruit go very good
together in this simple to make salad.
You can add feta cheese and black olives
but I like to keep this salad simple.
Ingredients:
1/2 head Chinese cabbage
1 head Boston lettuce
1 can (1 lb.) artichoke hearts, drained
2 fresh grapefruit, peeled and sectioned
1/2 cup red onion, diced
1/4 cup olive oil
2 teaspoon fresh lemon juice
1/4 teaspoon fresh basil leaves
Salt to taste
Black pepper to taste
Directions:
Wash and thoroughly dry greens.
Break into bite-size pieces.
Place into a salad bowl.
Top with artichoke hearts
and grapefruit sections.
Combine remaining ingredients.
Add to fruit and greens.
Toss lightly and serve.
