This recipe is the result of too many
red ripe garden fresh tomatoes on hand
and a craving for a creamy warm meal.
The tomato adds a tartness that is
balenced well by the maple syrup.
Ingredients:
1 cup oats
1 tomato, chopped
2 fresh basil leaves, chopped
1/4 teaspoon salt
2 cups water
maple syrup
Directions:
In a small saucepan add water,
tomatoes, salt and oatmeal.
Bring to a boil, stirring.
Add in the fresh basil and
serve with a drizzle of maple syrup.
