Microwaved Potato
Ham and Cabbage

One of my favorite comfort food dishes.
Mashed potatoes gets some flavor boost
from some cooked ham and fresh cabbage.
Velveeta cheese makes this very good.

Ingredients:
2 russet potatoes, washed
1 cup fresh cabbage, chopped
1 cup cooked ham, chopped
ground black pepper
velveeta cheese
4 tablespoons water

Directions:
In a glass bowl, place potatoes
and add 2 tablespoons water.
Heat in microwave 8 minutes.
Remove to let cool.
In same glass bowl place cabbage
and add 2 tablespoons water.
Cover loosly and cook 6 minutes.
In a bowl place cabbage, chop up
the cooled potatoes and add to cabbage.
Add the cooked ham and pepper to taste.
Top with a few slices of velveeta,
cover loosly and microwave again
just for a minute or two to heat through
and melt the cheese on top.
