Patatas Bravas
Bravas Potatoes

Patatas Bravas or Bravas Potatoes
is one of the classic Spanish tapas
dishes and is served in bars all over Spain.
The sauce has a slight bite from the Tabasco,
hence the name bravas, which means "fierce."
This is a quick and simple tapa recipe.

Ingredients:
3 tbsp olive oil
1 small onion , chopped
2 garlic cloves , chopped
2 pounds of new potatoes
5 fresh tomatoes
1 tbsp tomato purée
2 tsp paprika
Good pinch chili powder
Salted water to cook potatoes
Salt and pepper to taste
Chopped fresh parsley

Directions:
Cook the potatoes and allow to cool.
Heat some oil in a pan add the
chopped onion and fry for
about 5 minutes until softened.
Add the garlic, chopped tomatoes,
tomato purée, paprika, and chilli powder,
Simmer for 10 minutes until pulpy
then season with the sugar, salt and pepper.
Cut the potatoes into small cubes
and place into a frying pan
until they are crisp and golden.
Add the spicy tomato sauce
and taste for seasoning.
Finish with a sprinkle
of chopped parsley and serve.
