Pleasant Hot Dog
Special Onion Relish

This relish is very special indeed.
The sweet onions take on the sour
flavor of the saurkraut yet still
have a pleasant sweet tasting finish.
Serve this on grilled hot dogs,
no other topping could be better.

3 large sweet onions
8 ounces saurkraut
8 ounces roasted red peppers
2 celery stalks, chopped fine
2 tablespoons brown sugar
4 tablespoons unsalted butter

Preheat oven to 350 degrees F.
Butter the bottom of a baking dish.
Peel onions and slice very thinly,
place sliced onions in baking dish.
Add red peppers and celery to dish.
Add saurkraut evenly over onions.
Dot with some more unsalted butter.
Bake covered for 45 minutes.
Remove and stir to combine well.
Remove to a covered container
and refrigerate overnight to use.
