Quick Homemade
Tomato Sauce

There's nothing like the taste of
freshly cooked tomato sauce made
with garden picked red-ripe tomatoes.
I make this sauce in about
2 hours from start to finish,
making about onw gallon of sauce.

Ingredients:
60 Plum or Roma tomatoes
1 tablespoon salt
2 tablespoons sugar
4 tablespoons olive oil
6 cloves garlic, peeled and minced
1 teaspoon dried oregano
dash of baking soda
dash of instant coffee

Directions:
Remove stems and wash tomatoes.
Cut tomatoes in half lengthwise
and again wdthwise diagonally,
place in a large soup pot.
After all tomatoes are cut up
add salt and sugar.
Bring to a boil on high heat,
stirring a few times.
Once boiling reduce heat to a simmer
and cook tomatoes down for 30 minutes.
Stir in oregano, garlic and check for
salt and sweet adding more if needed.
Add baking soda and coffee granules.
I use an immersion blender now to
chop the tomatoes up and thicken the sauce.
You can use a blender or food processor.
Also you can put them through a food mill
to remove the seeds from the sauce.
And you could add some canned tomato paste
if you want a thicker sauce.
I like to add a drop of hot pepper sauce.
