Stuffed Fresh Tomatoes

I sometimes cheat by using leftovers
from the refrigerator to stuff foods.
Here I had some tasty leftover
sweet and sour chicken with rice.
This is a very good way to made
something new that looks good and
tastes better than it looks.

Ingredients:
For each stuffed tomato:
1 Beefsteak tomato
leftover sweet and sour with rice

Directions:
Wash tomato and using a knife
cut a circle around stem in
a cone type movement and remove.
Using a spoon remove seeds.
Cut a small slice off bottom
so that tomato stands upright.
Stuff tomato and microwave
2 minutes or until heated.
