I've been told that the quinoa
I bought is very good for you.
Here is a recipe for making a
vegetarian fruit quinoa pudding.
Ingredients:
1 cup organic quinoa
2 cups boiling water
1/2 cup dried cherries
1/2 cup dried cranberries
1/2 cup unsweetened apple juice
2 bananas
1 tsp grated orange rind
1 tsp vanilla
1/2 tsp cinnamon
Directions:
Rinse quinoa well in water if not pre-washed.
Bring water to a boil, and add in the quinoa.
Let the quinoa simmer for 7 minutes.
Add the dried fruits to the quinoa
and simmer for 5-7 minutes
so that it absorbs the liquid.
Puree the rest of the
ingredients in a food processor.
Mix together the quinoa and the puree.
Chill before serving.
