Stewed Tomatoes

With the backyard vegetable garden
almost done for another fine season,
I brought in just about the last
of the ripe tomatoes and used them in
a recipe for making stewed tomatoes.
An easy way to peel tomatoes is to
blanch them in boiling water and then
plunge them in ice cold water, the
peels come right off real easy like.

Ingredients:
1 cup sugar
1/2 cup water
1 cinnamon stick
1 lemon, halved
2 garlic cloves, peeled
24 tomatoes, peeled

Directions:
Mix together 2 cups sugar and
half cup water in large saucepan.
Cook until sugar is dissolved.
Add cinnamon stick, garlic and
lemon then bring to a boil.
To this syrup, add tomatoes
and cook about 20 minutes.
Take out the cinnamon stick
and lemon and boil another
25 minutes, stirring often.
Remove from heat and let cool.
Use right away or put in jars.
