Crawfish Soup

The first time I tried to make a
craw fish soup it was almost tasteless.
This is a better than good tasting soup.

Ingredients:
1 Stick unsalted butter
1 large Onion, peeled and chopped
2 Celery stalks minced finely
1/4 cup Green onion finely sliced
2 Cloves garlic, peeled and minced
2 cans Cream of potato soup
1 can Cream style white or yellow corn
1 pound Crawfish tails w/ fat
1 quart Half & half
Salt to taste
Old Bay Seasoning Mix to taste
1 tablespoon Fresh chopped Parsley

Directions:
Melt the stick of unsalted butter
in a bowl in microwave.
Place in a saute pan and saute onions in butter,
then add celery, green onion, and garlic and
simmer for an additional 5 minutes.
Add remaining ingredients.
Simmer for about 40 minutes.
Serve hot with french bread or garlic bread.
