Egg Drop Soup with Scallions

I like to make this soup on cold winter days.
This is a Chemotherapy friendly soup.
Simple to make with only a few ingredients.
Very comforting to eat and good for you too.

Ingredients:
14 ounces fat-free chicken stock
2 large eggs
1 teaspoon cornstarch
salt to taste
1 green scallion, snipped

Directions:
Heat broth in saucepan to boiling.
In a bowl whisk the eggs well.
Add the cornstarch to help keep
the eggs in larger lumps in the soup.
Remove pan from heat once broth is boiling.
Gently stir in the beaten eggs.
Taste for seasoning. Add salt if desired.
Garnish with snipped fresh scallions.
