I like these cookies and make these
for the holidays every year.
Sometimes I add chocolate chips
but not in this recipe today.
Ingredients:
2 cups flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter
1 cup sugar
1 egg
1 teaspoon almond extract
1/2 cup Pistachios, chopped
Directions:
Combine flour, baking powder and
salt in a mixing bowl.
Sift together and set aside.
In another large bowl cream butter,
sugar, egg, vanilla and almond extract
until mixture is light and fluffy.
Add the green color and pistachio nuts.
Form the green dough into a roll and chill.
Slice cookies 1/8" thick and place on
ungreased cookie sheet about 3" apart.
Bake at 375 degrees F. for about 10 minutes.
