Kona Coffee Cookies

These are really good tasting cookies.
You could use any coffee, I used Kona.
You could ice these with coffee icing.

Ingredients:
6 tablespoons unsalted butter
1/2 cup sugar
1 large egg
1 cup self raising flour
1/2 cup cornflakes, crushed
2 teaspoons instant Kona coffee

Directions:
Preheat oven to 350 degrees F.
In a mixing bowl cream together the
sugar and butter until light and fluffy.
Beat in the egg and the flour,
add instant Kona coffee and cornflakes.
Place by the teaspoonful 2" apart on a
greased baking sheet.
Bake in oven 8 to 10 minutes,
remove to cool on wire rack.
