I put plenty of fiber in these great
tasting chewy black bean cookies.
There made with butter and sugar and
people like them and never can guess
that I put a can of beans in them.
Ingredients
1 cup unsalted butter
1 cup white sugar
1 large egg
1 can black beans, drained
2 2/3 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons vanilla extract
Directions:
In a mixing bowl, cream together the butter
and white sugar until light and fluffy.
Beat in the egg, then stir in the vanilla.
Place the black beans in a food processor
and pulse until chopped fine, add to the bowl.
Combine the flour and salt;
stir into the sugar mixture.
Cover dough, and chill for at least one hour.
Preheat oven to 400 degrees F.
Press dough out onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven,
or until lightly golden at the edges.
Remove from cookie sheets to cool on wire racks.
