Olive Oil Crispy Potatoes

This is good to make on a cold winter day,
it goes good as a side for baked chicken.
Easy to make and tastes really great.

Ingredients:
3 Russet potatoes
1/2 cup Olive oil
salt to taste
pepper to taste

Directions:
Preheat oven to 400 degrees F.
Line a baking sheet with foil.
Peel and slice potatoes to 1/2".
Arrange in one layer on baking sheet.
Drizzle with oil and season to taste.
Bake for 40 minutes, then turn potatoes,
drizzle with more olive oil if needed,
season and bake until brown and crispy.
About another 15 minutes should do it.
