Earthy tasting black eyed peas along with
a few simple ingredients make for a good
tasting and colorful bean salad.
Ingredients:
1/2 pound dried black eyed peas
4 cups cold water
2 tablespoons olive oil
3 cloves garlic, peeled and minced
1/2 cup diced red onion
1/2 cup pickled cauliflower, diced
1/2 cup pickled carrots, diced
1 small hot pepper, minced
1 small carrot, peeled and diced
1 small celery stalk, diced
3 cups cold water
1/4 teaspoon ground black pepper
Directions:
Soak black eyed peas in 4 cups cold water overnight.
Drain and set aside.
Place olive oil in bottom of a soup pot,
add in minced garlic, diced onion, carrot, celery and
pickled cauliflower and red pepper.
Heat on high heat for 4 minutes, add in 3 cups
cold water and turn heat to a simmer for 2 hours.
Add more water if needed.
Adjust seasonings to taste and serve warm,
or refrigerate up to five days before serving.
