Chicken and Rice Soup

I thought it was chicken parts that I had
sitting in a plastic bag in the freezer but
as it turned out it was a few pieces of leftover
cooked turkey I had stored away to make soup with.
I always think I'll remember what's in the freezer bag,
and almost always never do, so remember folks,
to write on the freezer bag what your putting inside.
So I made turkey and rice soup, you get the idea.
This is real home-made tasting soup.

Ingrdients:
6 cups cold water
2 or 3 pieces chicken or turkey
1 carrot, peeled and sliced
2 celery stalks, sliced
1 medium onion, peeled and sliced
1 teaspoon salt
a dash or two ground black pepper
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
2 dried bay leaves
1 cup uncooked rice
1 tablespoon unsalted butter

Directions:
Prepare vegetables and put in a soup pot along
with chicken, carrots, celery, onion,
bay leaves, salt and pepper to taste.
Bring to a boil, lower to a simmer
and cook for about 45 minutes.
Remove chicken from pot, set aside to cool.
Stir in rice and simmer for another 45 minutes.
(Do not allow rice to boil for it will explode)
Cut chicken into small pieces suitible for soup
and stir into the rice and vegetables in the pot.
Remove the bay leaves and add in the tablespoon
of butter just before serving.
