These are little soft chocolate pillows
of cookie dough with pineapple in it.
I dropped these by teaspoonfuls,
but I'm sure the dough could be made
into balls using your hands if desired,
simply add in more flour to the batter.
These really are irresistible tasting,
not too sweet with a pleasant flavor.
Ingredients:
1 1/3 cups flour
1/4 cup cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 /2 cup vegetable shortening
1 cup brown sugar
1 large egg
1 teaspoon vanilla
1/4 cup crushed pineapple
Directions:
Preheat oven to 365 degrees F.
In a mixing bowl cream together
the shortening and the sugar.
Add in the egg and vanilla, Mix well.
In a seperate bowl combine the flour
with the baking soda, cocoa and salt.
Slowly mix the flour mixture into the
mixing bowl with the shortening mixture.
Make a cookie dough to drop by
teaspoonfuls 2" apart onto cookie sheet
and bake for about 12 minutes or until done.
