Chicken leg quarters were on sale at the grocery store today.
I put together a simple citrus glaze and baked them up
into crispy orange basted chicken leg quarters perfection.
This recipe is easy to make and the chicken tastes great.
Ingredients:
4 chicken leg quarters, skin on
1 large navel orange, sliced 1/4"
sprinkle of salt and pepper
4 tablespoons orange marmalade
Red hot pepper sauce, optional
Directions:
Preheat oven to 450 degrees F.br>
Arrange orange slices side by side in a roasting pan.
Place chicken on top of orange slices.
Season chicken with salt and pepper to taste.
Smear orange marmalade on top of chicken.
Sprinkle on some hot pepper sauce if desired.
Cover roasting pan and bake for 60 minutes.
Change oven to broil setting and uncover pan
Broil chicken until nicely browned on both sides.
Let chicken rest for a few minutes before serving
pouring juices from the roasting pan over chicken.

Oven BBQ Chicken Thighs
Barbecued chicken thighs are a tasty treat.
This is really easy to prepare and bake.
The oven works good and the chicken is great.
Use any dried spices or seasonings of your choice.
Ingredients:
8 chicken thighs w/skin on
4 teaspoons olive oil
1 teaspoon Adobo seasoning
black pepper to taste
4 teaspoons bottled BBQ sauce
Directions:
Pre-heat oven to 425 degrees F.
Line a large baking pan with aluminum foil.
Spread olive oil on foil and season chicken thighs,
place chicken skin side down on foil in baking pan.
Bake uncovered for 30 minutes then remove
pan to turn chicken then sprinkle chicken thighs
with barbecue sauce and return to finish baking
until internal temp of chicken reaches 165 degrees F.
Cover pan to let rest 10 minutes before serving.
