Potato Peanut Butter Pinwheels

A regular item at my sons school bake fair
are these peanut butter and potato cakes.
Some people call this a sugar cookie or candy.
Simple to make and easy to eat more than one.
A thing to do with leftover mashed potatoes.

Ingredients:
2 cups leftover mashed potatoes
1/4 cup whole milk
1 teaspoon vanilla extract
1/4 teaspoon salt or to taste
16 ounces confectioner's sugar
2 tablespoons cocoa powder
1 cup creamy peanut butter

Directions:
Combine mashed potatoes, milk, vanilla extract,
cocoa powder and salt in a mixing bowl.
Roll dough out into a large rectangular shape.
Spread peanut butter on top of dough to cover.
Roll dough into a jelly roll shape and then refrigerate
overnight to let the flavors blend.
Slice into 1/4 inch pinwheels to serve.
