Fresh Asparagus Poached in Oil

This is the essence of the new season.
Poached in olive oil until tender crisp.
Served with a buttery or creamy sauce,
fresh asparagus is a springtime pleasure.
Serve this with freshly shaved Parmesan.

1 bunch fresh asparagus
1/4 cup olive oil
sprinkle of salt to taste

Place cleaned asparagus in a saute pan
and pour in just enough oil to cover.
Bring to a slow simmer, do not let boil!
Simmer for 10 minutes or until tender.
Serve with freshly shaved parmesan cheese
on top with melted butter or a cream sauce.
