These sweet potatoes are creamy good when
baked in the oven, even better tasting when baked
in the heat of a camp fire or smoking hot fireplace.
Ingredients:
1 sweet potato per serving
1 teaspoon olive oil for each
1 square of aluminum foil per potato
1 tablespoon butter for serving them
salt to taste
Directions:
Wash fresh sweet potatoes and pat dry.
Place potato on aluminum foil and drizzle
with olive oil to coat all over potato.
Wrap foil around potato to tightly seal.
Bake for about 1 hour in a 350 degree F. oven.
Or simply throw the prepared potatoes into
the hot embers of a camp fire or fire place.
Remove in about 1 hour and serve with butter
and a sprinkle of salt or to taste.
