Here's an easy to make potato Gnocchi recipe.
They're really light, fluffy and taste great.
Served with red sauce and topped with cheese.
I don't add additional salt as the potatoes
were boiled in salted water to begin with.
When making Gnocchi use as little flour possible.
Ingredients:
2 cups cooked mashed potatoes, cold
1/2 cup flour (or more), sifted
1/4 cup corn starch, sifted
1 egg, beaten
4 cups cold water for cooking
Tomato sauce for serving
Grated cheese for garnish
Directions:
Sift flour together with corn starch.
Beat egg in a bowl and combine with the
flour mixture to form a soft dough.
Roll dough into 1/2 inch ropes and cut
into 1 inch pieces, then using a fork
or a wooden Gnocchi board make Gnocchi.
Bring water to a rolling boil and cook them
until they come to the surface of the water.
Using a slotted spoon, remove them to drain.
Serve along with a nice red tomato sauce.
And some freshly grated cheese of choice.
