Vegetable Beef Stew

This is so easy to throw together.
What makes this is the slow cooking.
I used a big soup pot and placed all
of the ingredients into it to simmer
for a good three hours or until done.
At the end of cooking I adjust seasonings.

2 tablespoons olive oil
2 garlic cloves
3 russet or red potatoes
1 sweet onion
1 cup baby carrots
1 cup sugar snap peas
2 cups diced leftover beef steak
1 pint grape tomatoes
2 cups water
1 tablespoon Beef Bouillon
1 can stewed tomatoes
1 hot cherry pepper
2 bay leaves
Black pepper

Place all ingredients in a big pot.
Cover and bring to a boil on high heat.
Lower heat to a slow simmer until done.
Remove Bay leaves and season to taste.
