It's getting to be the time o' year I start baking more.
Home made Pizzas, cookies and everything with bread dough.
This bread is easy to make, though maybe a bit time consuming.
As with most bread it needs an hour or so to rise double in size.
However, it makes a wonderful cure for a boring rainy day afternoon,
and fills your home with an embracing aroma of roasted garlic and yeast.
I like to use oily olives or those marinated in herbs rather than canned ones.
This time I cheated and used a box of Pillsbury hot roll mix,
I know, I know gramma is turning over in her grave.
I just didn't want the flour mess from scratch baking to clean up today.
Adding to the dough about a half cup each of chopped red onion,
black olives and green olives dusted with some garlic powder.
Following the instructions on the box to make pizza dough.
Kneaded it, then let it rise an hour to bulk up.
On the baking sheet to go in the oven at 400 degrees
for about 40 minutes, let cool on wire rack.
The bread came out really good,
A little salty from the green olives but that's what I wanted.
It's a good bread to go with a seafood like salmon or shrimp scampi.
I feel like I'm in Greece or somewhere in the Mediterranean
from the aroma of garlic, onion and olives.
And no it didn't rain here today.
