Pineapple Upside Down Cake

I had bought a fresh pineapple and found it not so ripe or sweet.
Getting tired of seeing it in the fridge I decided to make a cake.

Ingredients:

1 1/4 cup all purpose flour
3/4 cup milk
1 egg
1/2 cup granulated sugar
1 teaspoon vanilla extract
3 cups crushed pineapple
1/4 cup light brown sugar
1/2 stick butter-melted
2 teaspoons baking powder
pinch of salt

Preperation:

In a large bowl combine flour,baking powder and salt.
Add milk,beaten egg,and vanilla.
Mix well to a smooth batter.

Line the bottom of a 9 inch cake pan with parchment paper,
Put in crushed pineapple and even out in pan,
then top with butter/brown sugar and then batter.

Bake at 350 degrees for 30 minutes.
Remove from oven invert onto a plate.
Remove parchment paper slice and serve.
Fresh whipped cream is good with this!
